The Central Market - St Helier
Vienna is proud to be based in the Central Market, where we sell fresh bread, cakes, pastries, biscuits, sandwiches and snacks such as sausage rolls and pasties. Every week we also sell a Weekend Special - a special sweet creation crafted by our skilled patissiers. Often, they are a twist on a classic, such as Black Forest Roulade, Eton Mess Gateau or Neapolitan Battenberg, or a trusted favourite such as Victoria Sponge or Banofee Pie. Each Weekend Special is promoted on our Facebook page and website.
The Market has always evolved with changing customer demand and Vienna is no different. We have exciting plans to improve our Central Market shop so watch this space for more details.

Main Bakehouse - Rue des Prés, St Saviour
Most Vienna bread is baked at our purpose-built bakery at Rue des Prés Trading Estate in St Saviour. The bakery comes alive from 4 am each morning, when our team of artisans gets to work to supply hotels, cafes, pubs, supermarkets, stores and our Central Market shop with fresh bread and pastries. The operation is overseen by Bakery Manager Christophe Vaudry, a third-generation baker who learnt his craft in his native Normandy. Closely supporting Christophe is Head Baker Patrick Bellet, who also comes from a long line of French bakers. Between them, they have over 50 years of experience as craft bakers.
As well as the bakers, we have a dedicated team of packer-drivers, who ensure that our bread is delivered safely and promptly to our customers. The team is led by Foreman Tony Monteiro, who has worked at Vienna for over 35 years. Tony is supported by Dispatch Area Foreman Hilario Camacho.
Rue des Prés is also home to our orders team, led by Manager Eilish Barraud, and our Bookkeeper, Anne de la Haye. Overseeing the entire operation is Managing Director David Dodge.
