The history of Viennoiserie
Viennoiserie—a term that refers to delicate, enriched pastries like croissants and pain au chocolat—has a rich history that connects Denmark, Austria, France, and beyond. These pastries take their name from Vienna, where techniques for laminated dough and enriched baking were inspired by Danish bakers before influencing French baking traditions.
A legacy of craftsmanship
Our own story at Vienna Bakery is deeply tied to this history. Bob Dodge, who founded our bakery over 60 years ago, trained at the renowned Lyons & Co Bakery in London. Lyons was known for its high standards and was heavily influenced by European bakers who had brought their skills and knowledge from Central Europe.
